Harvesting is done by hand and the grapes are picked in boxes; the bunches leave immediately in the direction of the cellar and are fully destemmed. The must is then fermented with the marc in cement tanks. Once alcoholic fermentation is over, the marc is pressed and the wine returns to the cement vats where it is left to age for about six months. In February, the blending of the wines from the three grape varieties is decided. After blending, the wine matures in wooden vats for about 18 months. Finally, it is bottled and remains to refine in the bottle for about 12 months.
