Our tips for using truffles properly: To keep the flavours intact, raw truffles are best eaten in combination with ingredients that have a neutral taste. Raw meat, eggs, pasta, risotto and butter are the best combinations. Scallops and sole also go very well with truffles. Be careful with spices and herbs, apart from thyme, which is the only one that brings out the flavour. White truffles should never be cooked as they cannot withstand high temperatures.

The story of Angelo Sabetta and the truffle began in 1989, when he happened to overhear a conversation on the subject. At the time, he knew nothing about truffles, being a painter by profession. Somewhat out of necessity, lack of work in winter and curiosity, he decided to become a truffle finder. With his degree in hand, Angelo bought a dog, but a problem arose: where to go to find the truffles? With patience and courage, he slowly worked out where to venture, what areas were suitable, the soil and the trees. Things came to a head when, due to health problems, he could no longer be a painter. In 2001, after obtaining a licence and purchasing the appropriate equipment, he opened a laboratory to work with truffles. Today, Tartufi Sabetta is a family business run by Angelo, his wife and son. Angelo is committed to processing these products with professionalism, offering products of excellence that respect nature.
