Ho to make a good "bolognese sauce": To make a good Bolognese sauce, it is important to start by frying in olive oil minced onions, celery and carrots. Add the tomato sauce (passata) and let it cook over a low heat. Cover to keep all the flavours. As tradition dictates, the same wooden spoon/spatula is always used to turn in the sauce. Because the wood absorbs the flavours, your tomato sauce will taste better every time. To correct the acidity of the tomatoes, add a small pinch of sugar or bicarbonate. Be careful not to overdo it, it could spoil everything!
