* The "Miscuglio di Aleppo" is a mixture of seeds of ancient varieties from Syria. When these thousands of varieties are sown in a given place, the environment (soil, climate, exposure, etc.) will naturally favour the growth of certain varieties. This innovative technique helps to cope with climate change thanks to their ability to evolve over time, preserve biodiversity, increase yields in marginal and low-input farming systems, put seeds back in the hands of farmers and eat more varied and healthy food. "Miscuglio di Aleppo" is a protected label.

Our little tips: We recommend to season the rigatoni with strong and tasty red sauces:

- "alla norma": tomato and aubergine sauce
- alla boscaiola": mushrooms and fresh sausages
- amatriciana": tomato sauce and bacon
- "au four": tomato sauce and minced meat, mozzarella.

Modesto Petacciato's family farm is the only one in Molise that has been cultivating the "Miscuglio di Aleppo" (evolving populations) of durum and soft wheat for over 10 years. The farm uses this exceptional wheat to transform it into pasta. Located 40 km from the Adriatic Sea, between the hills and the plains, the farm has started to spread the evolutionary populations, closely followed by the agronomist and initiator of the project, Salvatore Ceccarelli. The farm also produces excellent red fruit jams and tomato sauces in its own processing laboratory. The innovative technology of the machines used to produce the products is of the highest quality. All their products are certified organic.
