Dellarole rice is an ancient Italian rice variety whose cultivation dates back to the early 1900s. It belongs to the ‘medium’ group with a round grain. The company Una Garlanda cultivates rice in a completely natural way, using practices of rotation, of ‘green mulching’ in the presence of increasingly wild grassy embankments to re-create biodiversity. Dellarole white rice is suitable for all preparations. Cooking times may vary depending on how it is cooked, the type of recipe, habits and preferences. As an indication, cooking time varies from 10 minutes in a common pot, 15 for classic risotto and 6 minutes in a pressure cooker.

Una Garlanda has been growing rice for four generations. In the mid-1990s, the family business began to convert to organic farming, gradually abandoning the use of chemicals. In the 2000s, it joined the organic regime. After some disappointments with a system considered insufficient to truly protect nature and guarantee the intrinsic quality of the products, it implemented the principles of MA-PI polyculture designed by Mario Pianisi, which became a true guide for the company. By following this method, it managed to recreate the natural environment that the conventional rice-growing practices of the past years had destroyed. It was a difficult conversion, made up of experiments and long observations. The company started growing rice from ancient seeds, thanks to the national and international association "UPM Un Punto Macrobiotico". It received small quantities from the seed bank of the National Rice Authority. Today, the family business is the first organic seed company to preserve 8 ancient varieties of rice: Bertone and Originario Chinese, Lencino, Chinese Ostiglia, Nano, Dellarole, Precoce Gallina, Precoce 6. Una Garlanda also handles the processing of the rice, thanks to the magnificent equipment (especially wooden) with which all the stages are carried out, from cleaning to hulling, right up to the packaging of whole, semi-whole and white rice.
